This shop is next to the famous western food restaurant "Rengatei". The interior decoration of the shop is made of wood, and has a relaxing atmosphere, nice & spicy aroma.
Mapo tofu are flavorful, has a nice & sweetness, umani, and various spicy flavors. It tastes really good, so I can't stop eating. Noodles are very chewy, best with this soup. When I put the Japanese pepper of grapes in the bowl, the flavor had a fresh kick. Mapo tofu is a very popular food but this is amazing. If you come to Ginza, please enjoy this bowl.

A back alley in Ginza. This shop is as famous as "Kagari" that was relocated to same street. Both ramen shops usually have a long line. I like the atmosphere of this shop, an aura of chef, and the flavor of sake lees.
The food presentation always looks nice, the slice shape of green onions is beautiful. The soup made from sake lees, chicken, pork, clam, and oyster broth tastes very unique, has a full of flavor of sake lees. Aftertaste contains various flavors, so it's very interesting to find secret ingredients in this soup. The noodles are chewy, has a nice texture, go well with this soup. Especially, the combination of pickled ginger & this soup is amazing. After eating, it makes me feel nice & hot, and remind me that I ate "Irorimen" of a famous ramen shop "Ichifuku". Anyway, I am relieved to eat this in this sophisticated town, I again realized this is a great ramen.

This is produced by Mr.Tuskada of "BOND OF HEARTS". It's a famous ramen group in Nagano.
The dip sause made from chicken & freshwater clams broth tastes rich, but it has crisp taste too. Straight noodles are very silky, they have a nice flavor of wheat flour, and after mixing truffle oil, they go well with this sauce. Aftertaste is very nice, makes me feel like elegant of Ginza. After mixing the mousse, I enjoyed a change of taste, revolutionary taste. Anyway, a very good and tasteful dip noodle. This is a new dip noodle in Tokyo.

Ramen soup made from red snapper & kelp seaweed broth tastes very rich & fresh. Looks little taste, but has a strong flavor. Noodles are chewy, nice texture, good condition. Enjoy a slightly sweetness & umami of grilled scallops as a Hashi-yasume (small dish served in between main dishes)

Third brand ramen shop of "Katsumoto" ramen chain. There is always a long line for the ramen, the wait time is about 1 hour.
It looks like a tanrei shoyu ramen(classical soy sauce ramen with chicken oil), but it doesn't use any sauces, and uses only ingredients. Although not only no msg, but also no salt, the soup made from duck & chicken broth with refined chicken oil has a rich & premium flavor. Silky & thin noodles have a nice texture, enhances the flavor of the soup. Anyway, the famous Japanese traditional spot "Kabukiza" is near here, so I'm sure all people can enjoy this wonderful ramen. And this shop will be a famous in Japan.
