1. Sushi Rekireki Hyakubangai Branch
Sushi Rekireki offers nigirizushi made with ingredients that are seasoned with salt or vinegar or pickled in soy sauce for a delicate touch. Even though their offerings are high-quality, the prices are reasonably low, so it's a popular restaurant. Their omakase set of 8 pieces ("omakase" meaning the chef chooses what to serve) is 2,300 JPY (excl. tax) and comes with 8 nigirizushi pieces and makisushi rolls, as well as soup, so it's a great value. Seasonal ingredients and standard sushi toppings like tuna and squid are served piece by piece. They're seasoned so you can eat it without adding soy sauce, but since all of them have been prepared to bring out the best flavors of the seafood, you can feel the skill of the chef. This is a recommended restaurant for people that want to leisurely enjoy genuine sushi.

2. Kanazawa Maimon Sushi Main Branch (Ekinishi Main Branch)
This is the main branch of a conveyer belt sushi chain that is particularly popular in Kanazawa. Every morning and evening, they bring in fresh seafood from the harbor and market. Depending on the season, they offer plenty of local seasonal ingredients. It's definitely a conveyer belt sushi restaurant that has the approval of the locals. Whelk, red squid, rosy seabass, greasyback shrimp, broiled Noto brand beef, and other rare ingredients are definitely some types of sushi you have to try! Also, the weekday-only Irodori Lunch (1,000 JPY (excl. tax)) comes with ten types of nigirizushi, eggs, and soup. This restaurant is recommended for those that want to enjoy reasonably priced sushi that you can only find in Kanazawa.
3. Yamasan Sushi Main Branch
Yamasan Sushi is a restaurant that's part of Ohmicho Market, an area called the kitchen of Kanazawa. They focus on rice bowls and sushi made with local fish, and you can also enjoy regional cuisine and local liquors as well. This restaurant is famous for their kaisendon (seafood rice bowl) for 2,700 JPY (incl. tax). This dish is so voluminous the ingredients are spilling out of the bowl. Crab, scallop, sea urchin, salmon roe, tuna, salmon, and almost every possible ingredient you can think of is in this dish. All of them are incredibly fresh and go well with the vinegared rice hiding beneath it, so there are many people that eat the bowl clean before they realize it. Also, the slightly luxurious sea urchin and salmon roe rice bowl (3,240 JPY (incl. tax)) is also recommended. This restaurant often has a line, so aim to go right when it opens.
4. Housyou Zushi
Housyou Zushi is a casual sushi restaurant in a reformed traditional-style house. They offer seasonal ingredients not just in their sushi but also in their traditional meals. Going for dinner is recommended. Their omakase nigiri course (starting at 2,500 JPY (excl. tax)), offered in different sizes starting at 12 pieces, uses only fresh seafood in their satisfying nigirizushi. The greasyback shrimp, a Kanazawa specialty, is lighter and has a better texture than sweet shrimp, so you might grow addicted to it. The all-star makisushi (starting at 2,500 JPY (excl. tax)), a roll with 12 kinds of ingredients, is voluminous and luxurious. This is a wonderful restaurant where you can eat sushi in a traditional Japanese atmosphere.
5. Sushitama Kanazawa Station Branch
Sushitama is a conveyer belt sushi restaurant directly connected to Kanazawa Station. They offer fresh seafood from harbors near Kanazawa for reasonable prices. They only use Koshi Hikari brand rice from Ishikawa, so the grains are slightly smaller than usual. The seafood itself is thick and voluminous, so this is a restaurant with great cost-performance and you'll want to eat a variety of types. The set of 3 local pieces (525 JPY) using seafood caught that morning changes depending on the season, but it's a great menu where you might be able to eat items like rosy seabass, scorpionfish, black rockfish, and other high-class whitefish representative of the area. This is a convenient restaurant where you can enjoy sushi immediately after arriving at or before departure from Kanazawa Station.
Since Kanazawa has not just Kanazawa Port but also the Noto Peninsula and Toyama Bay nearby, it's an area rich in seafood and you can enjoy a wide variety of fish all year round. Please enjoy fresh sushi that you can only eat here during your visit.
