It began with just two types of soba: the salt soba with the aroma of seafood, and salt soba with the flavor of chicken. It launched the “yama” variant in January 2017, and on its first anniversary (August 2017), it debuted the “kawa” to complete its lineup. Recommended here is the Kawa Koikoku Ebi Shio Soba (Shiro) (shrimp and salt soba with milky soup) (880 JPY) that is characterized by its richness and mildness, thanks to the condensed flavors of ama-ebi (sweet shrimp) in the so-called double soup that is based on both seafood and chicken, as well as the added goodness of shrimp oil and plain soymilk.

Maruhachi Soba-ten – A Place to Enjoy the Old-Fashioned Flavors of Seafood
A new shop produced by Maruhachi Tonkatsu-ten, which has been in business in Oimachi for 62 years, Maruhachi Soba-ten competes in the ramen game with its old-fashioned Tokyo ramen that adopts the concept of going back to the basics. With soup that uses chicken and pork bones as the base, this ramen is flavored using soy sauce-based sauce with scallops and niboshi (dried sardines), giving the soup a solid taste that will make you want to drink it all up. Here, the Chuka Soba (Chinese noodles) (650 JPY) has a kind of taste that can be enjoyed by everybody, regardless of age. It is topped with roast pork that is cooked through steam convection to add robustness to the dish, turning it into something that will surely whet your appetite.

Takano is a popular restaurant that has constantly seen lines of customers outside its doors since it was founded in 1996. Operated by a couple from Niigata, this shop has been enjoying rave reviews for its ramen that uses ingredients from Niigata, such as niboshi and seaweed. Here, the popular Chuka Soba (700 JPY) comes with a highly aromatic soup that is made with clear soup from chicken bones and knuckles. The dish is finished with “oi-niboshi” that is cooked in a saucepan. The medium-fine homemade noodles have seaweed inside, making them tender and springy.

Menichi Kiccho – Admire the Unique Texture of Aodake Flat Noodles
Menichi Kiccho is one of the few restaurants in Tokyo where you can taste Shirakawa-style ramen with aodake flat noodles. The noodles that are made by hand using aodake (green bamboo) every morning are extremely elastic and have uneven curliness. More and more people are getting hooked on their unique texture! The Chuka Soba (670 JPY) uses these firm noodles, as they are great for picking up the sauce. The charcoal-grilled char siu (roast pork fillet) on top are also superb!

The two things that the owner of this restaurant is particular about are heating the pure soy sauce and controlling the temperature of the soup. The clear, soy sauce-based ramen soup that is made with clear chicken broth has a refreshing taste and delicious soy sauce aroma. The Toku Shoyu Ramen (special soy sauce-based ramen) (980 JPY) is loaded with ingredients like pork char siu, chicken char siu, aji-tama (soft-boiled egg marinated in soy sauce), wonton (dumplings), and green onions. You’ll be overjoyed at getting to eat pork and chicken char siu at the same time!
