≪3Major City Ramen Project≫tanreisan, who is actively mainly on Instagram as a 'personalized ramen concierge', came up with a series to share his recommended ramen shops through various means. He introduces ramen according to the foreigner's hometown and preference. This time, we are featuring recommended ramen shops in the fiercely competitive Shibuya Area.

The shop is named after Kipposhi(Nobunaga Oda in his youth), he was dubbed as Great Fool the warring states period. Shop has moved from Honjoazumabashi to Shibuya the end of last year.
A clear & blue soup is very beautiful, it has a rich flavor than before, and feel even stronger the outline of the taste. Thin noodles are silky, but has a nice bite. In contrast with this bowl's appearance, this is art of foods. Anyway, Nobunaga must be surprised at this ramen.

This shop's owner is a famous impersonation celeb. His name is Hey!Takuchan. He has won in ramen show's tournament, and dip noodles festival contest.
The soup has a nice flavor of dried some seafoods. The taste is very rich, the salt can bring the umami out. Slightly thin & straight noodles are very silky, have a nice bite, and unique texture. Anyway, a lot of people come to Shibuya center street to eat this ramen.

This is a branch shop of "Chibakara" that is a famous ramen shop in Ichihara city, Chiba prefecture.
The creamy tonkotsu shoyu soup is perfect, has a rich umami, slightly sweetness, and balanced salty finish. Thick and flat noodles are very chewy, has a good flavor, texture, nice slurping. This type of ramen is sometimes called Jiro inspired ramen (Jiro ramen is a famous for piled high with vegetables), but the level of completion is amazing, and it has unique approaches. Anyway, this ramen is still good in Shibuya.

Newly opened in MAGNET shopping mall near Shibuya station.
The shop name Komiya is named after founder's Mr.Komiya of "Tetsu" that is a famous for dip noodle shop in Japan. This is a interesting mazesoba ramen(soupless ramen). After served, it has to make it by myself. Firstly wear work gloves, and put the hot bottled sauce into the bowl before eating. The sause is made from a tonkotsu shoyu soup with egg yolk and a nice flavor of special bonito flakes. After coating thick noodles with the sauce, it tastes better. If you are sick of having ramen, try to eat this mazesoba.

I’ve been visiting here once or twice every year since 2003. It's surprising that this year is 15's anniversary.
This finer soup made from pork bones & chicken bones, and dried some seafoods broth is one of the best ramen in Tokyo. It's still no msg, it's only one ramen on the menu, and only open during daytime. The owner chef "Hayashi" does not have a smile, but his work is always excellent, the great ramen is still in good even today. After all, I go here when I visit Shibuya in the daytime.
