High-flying ramen shop "Nagi group" in the world. The owner received training at "Ichiran". Not only his business skills, but also his niboshi soup is amazing.
Balanced soup has a lot of flavors, sourness, bitterness, spicy taste, and sweetness. They are in perfect harmony. Thick & flat noodles are perfect bite, really go well with this soup. A lot of niboshies give this soup a huge impact, but this is Nagi's true value. Tonight, Nagi is open in Shinjuku Golden Gai.t

This is 3rd brand of "Suzuran ramen group", "Hayashida" is followed by this.
The soup has a wonderful golden eye snapper broth. It lives up to its reputation. Taste, flavor, and aftertaste are slightly different from red snapper broth. Whole wheat noodles have a nice bite, good flavors, and go well with this soup. Food presentation looks nice, flavor is very unique, I feel the serious approach from this ramen.

Reverse imported ramen shop from San Francisco.
This shop has been listed on the Michelin Bib Gourmand. Food presentation is amazing, the beef taste is really tender like it melts in my mouth. The soup is made from beef bones & dried bonito flakes broth with flavored oil, very unique taste. Thick & flat noodles mixed with quinoa are nice bite. Quinoa is rich in nutrition, so more popular with women & foreigners in the future. I was surprised that this ramen is over 5000 yen in San Francisco, but I feel owner's enthusiasm and innovation about ramen from the quality of this bowl. Anyway, Shono's ramen is good as always.

◆ Ingredients・combinations
beef bones & dried bonito flakes broth, flavored oil, quinoa, wheat flour, beef, bamboo shoot, yuzu, chervil, green onion

This is a sister shop of the famous ramen shop "Itsuki".
Rich shrimp sauce is like a bisque, this is by far the best balanced dip noodle I've ever eaten. Slightly thick noodles look delicious, have a great bite and very nice flavor. When I eat bamboo shoots of the triangle, it reminds me of the ramen of "Watanabe@Takadanobaba".

shellfish broth, wheat flour, pork, seasoned boiled egg, bamboo shoot, cabbage, seaweed, green onion
