[Tokyo] 5 Ramens for Americans recommended by a ramen-manic who ate 1000 stores!

tanreisan, who is actively mainly on Instagram as a 'personalized ramen concierge', came up with a series to share his recommended ramen shops through various means. Newly opened in April 2019. This ramen is made by two people,one is the founder Mr.Nakahara" of Ichiran group and the other is his last apprentice. The soup is slightly light than Ichiran's tonkotsu one. It reminds me about Nagahama tonkotsu, has a sense of familiarity, a taste that comes later. The aging hot peppers give accent to the soup. Very firm & thin noodles have a fantastic feeling.

My favorite ramen shop in 2018. It's near my office. Topped ingredients change every season, and food presentation is really nice. Various kind of tastes make me feel like eating a traditional Japanese Kaiseki. The clear soup made from tonkotsu is beautiful,has a rich pork bones flavor, but aftertaste is really light. Very thin straight noodles are firm, have a perfect bite. Of course you should order a refill.

Newly opened in February 2018. This is tonkotsu shoyu ramen. (tonkotsu soup with soy sauce. It's a famous ramen in Yokohama. Called "Iekei ramen" in Japan) The flavor of shoyu is stronger than other Iekei ramens. Especially, Balanced aftertaste is finer taste and it continues very long. Anyway, this is one of my most favorite Iekei ramens.

February 1, 2019. Went to a famous ramen shop Hototogisu with ramen club members because I hear that the rain will turn to snow at night in Tokyo, so I think the shop is not crowded today. But as always there is a long line. Ordered the shoyu ramen this time. The soup has a mellow shoyu flavor, and special mixed broth made from chicken, dried some seafoods, and hard clams. The aftertaste has a very finer taste, this is one of the best ramen in Tokyo. I enjoyed the change of taste in the bowl, and the flavor of whole wheat flour is amazing. This is still in good even today.

Went to the famous ramen shop "Hayashi" before work. Have been visiting here once or twice every year since 2003. It's surprising that this year is 15's anniversary. This finer soup made from 2 broths (pork bones & chicken bones broth, dried some seafoods broth) is one of the best in Tokyo. It's still no msg now,it's only one ramen on the menu, and only open during daytime. The owner chef "Hayashi" does not have a smile, but his work is always excellent, the great ramen is still in good even today. If you go to Shibuya in the daytime, you must go.
