Shabu-shabu is a hotpot dish that is cooked for the purpose of enjoying meat. The thinly sliced meat is cooked by making it pass through the dashi-jiru (soup stock) that was cooked in a special pot on a tabletop stove, and then eaten with a separate sauce. 1. Dining Shabu-Shabu Jin Honten
Jin Honten is a restaurant dedicated to shabu-shabu that is located just around a 2-minute walk from the Osaka Municipal Subway’s Yotsubashi Station. Here, the Nihon Sandai Wagyu Set (three major Japanese beef set) (5,000 JPY (excl. tax)) is recommended because it will treat you to 80g each of branded beefs – Matsusaka, Kobe and Omi beefs. The Osaka Senshu Inunaki Buta Set (2,380 JPY (excl. tax)) is also an exquisite course that will let you enjoy Osaka’s brand of (Inunaki) pork. They have a wide range of dishes available, including the Teishoku (set meal) (prices start at 850 JPY (excl. tax)) for lunch and the Tabehodai Course (all-you-can-eat) (prices start at 1,980 JPY/person (excl. tax)) that is perfect for nighttime feasts. To those who want to eat meat until they are so full they can’t eat anymore, this restaurant is perfect!
2. Miyabi Nipponbashi Honten
Approximately 3 minutes from the subway’s Nipponbashi and Namba Stations by foot, Miyabi is a restaurant where you can eat a wide range of meat parts at relatively low prices since it buys one whole high-quality Kobe beef cattle. Recommended here is the Kobe-gyu Shabu-Shabu Gokujo Akami Course (shabu-shabu of premium lean meat of Kobe beef) (4,900 JPY (excl. tax)) that has sliced tender parts from the top round portion of Grade A5 Kobe beef, so it will give you the delicious taste of lean meat. The Yakishabu, which fuses yakiniku (grilled meat) and shabu-shabu, is a dish wherein you cook the thinly sliced meats meant for shabu-shabu on a roaster and then eat them with sauce. Try this exquisite dish that comes with the delicious aroma of yakiniku as a bonus.
3. Shabu-Tei Shinsaibashi Branch
Shabu-Tei is a shop that is about a minute’s walk away from the subway’s Shinsaibashi Station. Recommended here is the Jo-Rosu Gyu Shabu Course (premium sirloin shabu-shabu) (2,149 JPY (incl. tax)) – this restaurant’s classic signature dish. The carefully selected meat is delicious, but what really makes its taste even richer is the goma-dare (sesame seed sauce) that is put on the meat. This sauce is made with sesame seeds that are ground in a millstone and then seasoned with 22 spices. For dessert, try the Yuki Azuki to Shiratama ni Ice no Dessert (organic azuki beans and rice flour dumpling with ice cream) (453 JPY (incl. tax)) that is made by putting anko (red bean paste) on top of the restaurant’s specialty ice cream.
4. Shabu-Tei Mitsutera-suji Branch
This shop is an approximately 7-minute walk from the subway’s Shinsaibashi Station. Representing the sister shop of Shabu-tei Shinsaibashi Branch, it has a history of more than 30 years. When you come here, you must have the Mixed Gyu/Buta Shabu Course (mixed beef and pork shabu-shabu) (1,933 JPY (incl. tax)) that will let you enjoy beef and pork at the same time. One of the secrets behind the delicious meats is the use of specially made copper pot. Copper has superb heat conduction ability, so it can get hot quickly without letting the delicious flavors of the ingredients escape. There are copper pots for one person on the counter seats on the 1st floor, so you can eat shabu-shabu alone without having to worry about those around you.
Shabukichi is a shop that is located about 3 minutes from the subway’s Honmachi Station by foot. Here, you can taste the shop’s pride – Kuroge Wagyu (Japanese Black) beef. The beef that is served in the Gokujo Gyu Shabu Course (premium beef shabu-shabu) (5,000 JPY (excl. tax)) is made up of parts that are used in steaks of Saga beef, the ultra-high grade Japanese Black beef. It is a superb kind of beef that melts in your mouth and is bursting with flavors. The Gyu and Buta Mixed Shabu-Shabu (2,500 JPY (excl. tax)) is a great-value dish that will let you savor Japanese Black beef and domestically bred pork. The Gyu Shabu S (1,000 JPY (excl. tax)) and Buta Shabu (Double) (950 JPY (excl. tax)) are available during lunch as well.
The delicious flavors of the ingredients that were dipped in the soup when having shabu-shabu are condensed in the soup stock that is left in the pot after the meats, vegetables and other ingredients have been eaten. So, turn it into a zosui (porridge) by adding rice and beaten egg, or add udon noodles so you can enjoy shabu-shabu up to the last drop!
