Five Select Restaurants Serving Nagoya’s Popular Gourmet Dish, Doteni

Doteni is a dish of beef tendon slowly simmered with seasoning such as miso. It is a standard gourmet item in Nagoya. Here are five restaurants recommended for trying the popular Nagoya gourmet dish, doteni.

1. Choinomi Sakaba Meieki Nishiguchi Main Branch

This is an izakaya full of the mouthwatering smell of sumibiyaki charcoal grilled yakitori chicken where you can drop in for a quick drink. With a counter without seats for customers to have drinks on their feet, and upside-down crates used as seats at the tables, it has the feel of a casual sakaba bar. Try their signature dish, the unforgettable dotegushi skewer (140 JPY (incl. tax)). It is coated with miso with deep flavors and goes perfectly with beer. The Nagoya umaimon (tasty food) course (3,270 JPY (incl. tax)), that includes the dotegushi is a good deal. Note that the course needs to be reserved in advance by 6:00 pm the previous day.

2. Yabuya Nishiki Kinsan Branch

This is an old-style izakaya where you can enjoy all Nagoya specialty dishes at reasonable prices. The deep flavor of the viscous and sweet miso of its original akamiso doteni (390 JPY (excl. tax)) is out of this world. The fresh charcoal-grilled pork offal, sumibiyaki miso tonchan (600 JPY (excl. tax)), is also recommended. The secret miso sauce based on Hatcho miso developed for this sumibiyaki grill makes the dish. Enjoy Nagoya's representative dishes made using the regional specialty, Hatcho miso, in a smoke-filled environment.

3. Izakaya Tsuruhachi Shinkansenekimae Branch

This is an izakaya right outside the shinkansen bullet train exit of Nagoya Station. So it is recommended for those who want to eat as soon as they arrive in Nagoya, and those who want a quick drink before leaving Nagoya. In addition to the doteni, they have a variety of Nagoya specialty dishes such as chicken wings and miso katsu (tonkatsu pork cutlet with miso sauce). It opens at 1:00 pm, so you can enjoy a drink in the middle of the day. If you're stopping by during the day, you may want to try the dotemeshi (734 JPY (incl. tax)), doteni on top of rice. The sweet and deeply flavored doteni goes great with rice. This is a dish to shovel into your mouth without pretense.

4. Nagoya Meibutsu Sakaba Doteya Nagoya Station East Branch

This is an izakaya that serves mainly Nagoya specialties made with Hatcho miso, such as doteni and miso katsu. The beef tendon doteni (460 JPY (excl. tax)) with quality beef tendons cooked patiently with a secret Hatcho miso stock is popular. The kushikatsu skewer (100 JPY each (excl. tax)) of the 14-day aged pork that goes well with the specialty dote miso is also a must try. Also, during the cold season, the miso moriawase oden plate (480 JPY (excl. tax)), seeped in the secret oden stock made with 15 ingredients including Hatcho miso, is recommended.

4. Nagoya Meibutsu Sakaba Doteya Nagoya Station East Branch

5. Doteyaki Shimasho

This is a well-established Nagoya restaurant that opened in 1949. At Shimasho, doteyaki means miso oden hot pot. The recommended menu item is the assorted doteyaki plate (1,250 JPY)), which includes the standard beef tendon that has been patiently cooked in Hatcho miso, egg, and daikon radish prepped for ten days so that the flavors and color has seeped through. The deep fried kushikatsu skewer (150 JPY) dipped lightly in the doteyaki miso sauce is also a must try. The sauce looks so dark you'd think it would be super-rich, but it has a surprisingly light and fresh flavor. It goes well with sake, wine, and beer, so have it with your favorite drink. Note that the restaurant does not accept credit cards.

5. Doteyaki Shimasho

2-1-19 Sakae, Naka-ku, Nagoya, Aichi

Doteni is made with Hatcho miso, which is key to Nagoya cuisine, and has rich sweet and savory flavors that is addictive. It is dark brown, and almost black in some restaurants, but the flavors are not as strong as you'd expect. It goes well with alcohol, so give it a try. You may get hooked on doteni!
