Hokkaido is a land of great nature, including oceans and mountains, and wonderful food that comes from it. There is an extensive variety of ingredients and dishes in Hokkaido, such as: jingisukan, a regional dish of fresh lamb or mutton grilled at the table; seafood dishes made with the bounty of the sea, such as crab, sea urchin, salmon roe, and scallop; wagyu (a type of high quality beef) nurtured among the great Hokkaido nature; fresh milk products; and freshly picked vegetables such as potatoes. Many dishes in Hokkaido are cooked relatively simply so that the flavors of the outstanding ingredients are preserved and enhanced.

This is a restaurant that serves dishes made with plenty of fresh Hokkaido ingredients under the concept of "farm to table". There are buffets for breakfast, lunch, and dinner (limited season), with a variety of different dishes representing Japanese, Western, and Chinese cuisines. One example of a popular menu item is the roast beef that the chef carves for you on the spot. It is popular for the juicy flavors of Hokkaido beef that has been slow-cooked over a long period. This is a beer restaurant in Susukino, in central Sapporo. At this restaurant, you can enjoy bottomless servings of dishes made primarily with Hokkaido ingredients, such as Japanese Black wagyu beef and crabs (red king crab, snow crab, and hair crab). The recommended item is the jingisukan made with premium fresh lamb. The lamb is sliced by hand along the grain so it has a soft texture. The special sauce is made by blending more than 10 different spices and herbs giving it a rich, addictive flavor. It goes perfectly with beer, such as Sapporo Classic Tarunama that is available only in Hokkaido.

This restaurant serves this beef as shabu-shabu (parboiled thinly sliced meat with vegetables) and sukiyaki (thin slices of beef, cooked with various vegetables in a table-top cast-iron pan). Tokachi Japanese Black Wagyu beef is known for its fine fibers, soft texture, and the high quality of its red meat.
