What is Shime-Parfait?
Japan has this “shime” culture wherein you eat something (usually ramen or chazuke, which is rice with tea poured over it) after dinner or a night of drinking. Dip&Merry is a sophisticated cafe and bar that serves up parfaits. The Hojicha to Ringo no Parfait (1,404 JPY) is a parfait with a refreshing aftertaste from the rich roasted green tea and apple ice cream. Customers recommend trying their parfait and alcohol pairings, such as the Bitter Chocolate to Orange Parfait that goes great with sangria. Dip&Merry is the sister restaurant of the famous shop known as Parfait, Coffee, Sake, Sato that constantly has a line of customers waiting outside its doors.
2. Mirai.st
Mirai.st is a cafe and bar where you can eat parfaits filled with rich premium soft-serve ice cream from Shibecha Town. The Triple Berry Parfait (800 JPY (incl. tax)), consisting of a lot of colorful berries on top of thick soft-serve ice cream, has a fresh aftertaste. Snow Brand Parlor is a well-established restaurant that opened in 1961. It mainly serves dessert-type parfaits. Inside, you will find a wide array of colorful parfait samples lined up in the display racks. They have more than 30 kinds of parfait that use specialty vanilla ice cream and are generously topped with fruits, cheese, chocolates, and other ingredients! Your last chance to order is relatively early at 8:30 pm because the shop closes at 9:00 pm, so try to come early.
4. Milk & Parfait Yotsuba White Cosy Sapporo Paseo Branch
Milk & Parfait Yotsuba White Cosy is a restaurant that even families can easily visit. It is famous for its parfait that draws out the deliciousness of the milk used to make it. Directly operated by Yotsuba Milk Products, which is popular for its dairy products, this spot offers exquisite soft-serve ice cream made with milk produced in Tokachi, Hokkaido. Aside from the Renyu Ichigo no Parfait (860 JPY (incl. tax)), try the limited-time offers and parfaits that contain Hokkaido-grown Ebisu pumpkin and haskap (blue honeysuckle).

This is a bar where you can have your fill of sake chosen by the owner and handmade sweets. While it is a full-fledged bar, you can always come just for a shime-parfait. This is an izakaya (Japanese-style tavern) that serves sashimi, charcoal-grilled fish, chicken, and other handmade dishes. For your shime-parfait, order the 2-shoku no Ice Daifuku Parfait (390 JPY (excl. tax)), which comes with two daifuku (rice cake stuffed with bean jam) made of ice cream wrapped in gyuhi (rice flour). At this store, you can eat a wide array of dishes, such as pizza, Japanese-style gnocchi, and ikura-don (salmon roe on rice). As for the shime-parfait, try the Buono-ryu Parfait (699 JPY (excl. tax)) that offers a perfect combination between fresh strawberries and rich vanilla ice cream. The izakaya only offers private rooms, ensuring privacy and relaxation.
