1. Tsunezushi

Tsunezushi is a famous shop that has a lot of regular customers among locals, as well as those from outside the region. It has been selected in the Bib Gourmand for the Michelin Guide Hokkaido 2017 that lists shops where you can enjoy food for 5,000 JPY or less.
This sushi joint is famous for serving really affordable sushi that has been made with only the finest ingredients from Hakodate. Aside from the single-serving omakase (wherein the chef chooses what to serve the customer) meals – Jo (1,100 JPY) and Tokusen-jo (3,000 JPY) – you can also order sushi (prices start at 200 JPY for two pieces), so you can select whatever toppings you’d like. However, it is highly recommended to try the Sashimi-mori (assorted sashimi) (prices start at 2,000 JPY) with carefully selected ingredients caught that day. Pair it with some Japanese sake!

2. Sushi Shimauta

Sushi Shimauta is just a 2-minute walk from Goryokaku-Koen Mae Station. It is a shop that serves seasonal fish and seafood taken from coastal waters in the form of nigiri (hand-formed) sushi. What is served is determined by the chef.
From the Take (1,800 JPY) to the Gokujo Shimauta (assorted nigiri sushi) (3,300 JPY), you can choose the nigiri sushi set according to your budget. There are other kinds of sashimi (prices start at 800 JPY), such as Katsu Ika (squid sashimi) (2,000 JPY), as well as ala carte dishes (prices start at 900 JPY) that use Hokke (Okhotsk Atka mackerel), oysters, and abalone. You must also try the Tamagoyaki (rolled omelet) (1,200 JPY) that is always ordered by regulars! English menus are available.

Tsukasa is three minutes away from Goryokaku-Koen Mae Station by foot. It is a shop whose main draw is its high-quality and authentic nigiri sushi made by the owner, who has a wealth of experience from working in a famous shop for many years.
Here, the nigiri sushi and sashimi are not served with just soy sauce. The owner adopts a unique style in which the sushi pieces are accompanied by different kinds of dipping sauces, such as Uni-shio (sea urchin and salt), Lemon-shio (lemon and salt) that has the goodness of shiitake mushrooms, and Yuzu Shichimi-shio (citrus, a blend of seven spices, and salt). They bring out the true flavors of the ingredients. Try the Okimari Nigiri (standard set of nigiri sushi) for as low as 1,600 JPY. You can also choose your favorite toppings at 150 JPY per sushi piece or above.

4. Sushi-dokoro Kihara

Sushi-dokoro Kihara received a Bib Gourmand distinction on the Michelin Guide Hokkaido 2017. It is a shop where you can enjoy recommended Japanese sake with the bounties of the sea that have been selected based on the judgment of the chefs, who are experts on the ingredients.
If you come to this shop, you should try the Hon-maguro (Pacific bluefin tuna) that is caught from Tsugaru Strait from September – December. It has the best kind of lean meat and the perfect fat content. This fish is especially delicious during winter. Depending on the season and day, they sell local maguro (tuna) as well. A piece of sushi costs 300 JPY – 1,200 JPY, while the Okimari Nigiri is priced starting from 3,500 JPY for a set of 10 pieces. As for the Japanese sake recommended by the chef, there is a collection of famous alcohol from all over the country. You need to reserve in advance to dine here.

Operated by a fish dealer, Marukatsusuisan Honten (Main Shop) is a kaiten-zushi (a system where the sushi are placed on a conveyor belt and customers pick whatever they want from it) restaurant that makes eating sushi easy.
Since this shop is run by a fish dealer, it is only expected that its main appeal is its wide variety of extremely fresh sushi toppings. Aside from the classics, there is also a lineup of local fish and rare seafood that can only be found in Hakodate. Ala carte sushi is priced at 125 JPY – 670 JPY per plate. There is also an extensive list of side dishes, including sashimi (prices start at 600 JPY) and soups (prices start at 180 JPY).
